Ardenne Balls Recipe

Ingredients
1 package dry yeast
1/4 cup lukewarm water
1 (8 ounce) package cream cheese, softened
13 tablespoons butter, softened
2 1/2 cups sifted all purpose flour
3 eggs, separated
Oil for deep frying
Powdered sugar
Directions
Sprinkle the yeast over the water and stir to dissolve.
In the bowl of an electric mixer, beat the cream cheese and butter until smooth and fluffy.
Add the flour and egg yolks alternately to make a thick batter.
Beat the egg whites until stiff.
Add the yeast mixture and 1/4 of the egg whites to the flour mixture and combine thoroughly.
Carefully fold in the remaining egg whites.
Let the batter rise in a warm place for 30 minutes.
Heat the oil for deep frying.
Drop the batter by spoonfuls into the hot oil and fry 4 or 5 minutes or until the balls are puffy and brown.
Drain on paper towels.
