Ingredients

 Arbi1 Kilogram
 Black pepper1/2 Teaspoon
 Turmeric1 1/2 Teaspoon
 Ghee - 2 or 3 tbsps
 Salt1 To taste
 Red chilli powder1 Teaspoon
 Amchoor4 Teaspoon
 White cumin powder - 4 tsps
 Coriander leaves2 Teaspoon, chopped

Directions

GETTING READY
1 Wash the arbi well.

MAKING
2 In a pan, add water with 1 1/2 tsps salt, add in the arbi.
3 Bring to a boil.
4 When tender, remove using a slotted spoon.
5 Carefully peel the boiled arbi.
6 Gently press between your palms to remove any water.
7 In a pan, heat the ghee.
8 Deep fry the arbi until brown.
9 In the same pan, add 3 tablespoons of ghee and add in the fried arbi along with turmeric, salt, chilli powder, black pepper, coriander leaves, amchoor, white cumin powder .
10 Fry for another 2 to 3 minutes.

SERVING
11 Serve at once.
