Arbi Ki Tarkari (Dry Artichokes) Recipe
Ingredients
1/4 cup ghee dash of asafoetida powder
1 tablespoon carom seeds
1 lb arbi, scraped & sliced
salt to taste
1 teaspoon amchoor (mango powder)
1/2 teaspoon red chili powder
water as necessary
How to make Arbi Ki Tarkari (Dry Artichokes)
Heat the ghee in a kadhai, over a medium heat, and fry the asafoetida and carom seeds.Then add the next 4 ingredients, one by one, and stir thoroughly.
Add a few splashings of water, cover the pan or kadhai and cook for about 15 minutes until the arbis are tender.
Open the lid and stir a few times while still cooking.
When ready, serve hot.
