Apricot Whip Pie Recipe

Ingredients
1 cup pureed cooked dried apricots
1/4 teaspoon salt
3/4 CUp sugar
2 egg whites
1/4 teaspoon almond extract
1 tablespoon lemon juice
1 8-inch oatmeal pie crust
Apricot halves, cooked
Directions
Place apricots, salt, sugar, unbeaten egg whites, extract and lemon juice in a large bowl.
Beat with rotary beater until light and fluffy and stiff enough to stand in peaks.
Heap into oatmeal pie crust.
Chill.
Garnish with apricot halves.
Makes one 8-inch pie.
