 Pureed cooked dried apricots1 Cup (16 tbs)
 Salt1⁄4 Teaspoon
 Sugar3⁄4 Cup (12 tbs)
 Egg whites2
 Almond extract1⁄4 Teaspoon
 Lemon juice1 Tablespoon
 Oatmeal pie crust8 Inch
 Apricot halves1 Cup (16 tbs) (Cooked)

Directions

Place apricots, salt, sugar, unbeaten egg whites, extract and lemon juice in a large bowl.
Beat with rotary beater until light and fluffy and stiff enough to stand in peaks.
Heap into oatmeal pie crust.
Chill.
Garnish with apricot halves.
