| Pureed cooked dried apricots | 1 Cup (16 tbs) | |
| Salt | 1⁄4 Teaspoon | |
| Sugar | 3⁄4 Cup (12 tbs) | |
| Egg whites | 2 | |
| Almond extract | 1⁄4 Teaspoon | |
| Lemon juice | 1 Tablespoon | |
| Oatmeal pie crust | 8 Inch | |
| Apricot halves | 1 Cup (16 tbs) (Cooked) |
Directions
Place apricots, salt, sugar, unbeaten egg whites, extract and lemon juice in a large bowl.
Beat with rotary beater until light and fluffy and stiff enough to stand in peaks.
Heap into oatmeal pie crust.
Chill.
Garnish with apricot halves.
Makes one 8-inch pie.
