Ingredients
1/2 cup butter
1 cup sugar
2 eggs, unbeaten
2 1/4 cups cake flour, or 2 cups all purpose flour
21/2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup milk
1 teaspoon vanilla
Brown sugar
Tinned apricots
Directions
Cream butter and add sugar gradually.
Add one egg at a time and beat well.
Sift dry ingredients together 3 times.
Add milk alternately with dry ingredients and add vanilla.
Grease bottoms of muffin tins heavily with butter.
Add 1 teaspoon brown sugar and 1/2 apricots.
Fill tins 2/3 full of batter.
Bake in 350°F oven for 25 minutes.
Turn out at once.
Serve warm with whipped cream.
