Apricot Tongue Recipe
Ingredients
1 smail beef tongue
Water
1/4 cup soy sauce
2 cloves garlic, cut
sauce
2/3 cup brown sugar
3/4 cup catsup
1/4 teaspoon grated fresh gingerroot, or 1/2 teaspoon powdered ginger
1 tablespoon soy sauce
1 package dried apricots
Directions
Place tongue in large pot; add water to cover.
Mix in 1/4 cup soy sauce and garlic.
Bring to boil; simmer 2 to 3 hours until tongue is tender.
Cool; remove skin.
Trim base.
Put back in pot to reheat.
Slice before serving.
Make sauce: Combine all ingredients in saucepan; simmer slowly until apricots are soft.
Pour sauce over sliced tongue.
Mix in 1/4 cup soy sauce and garlic.
