Apricot Thimble-itas Recipe

Ingredients
Dried apricots - 1 cup, drained, cooked,
Sugar - 1/2 cap
Apricot juice - 6 tablespoons
Salt - 1/8 teaspoon
Orange juice - 1 tablespoon
Shortening - 2/3 cup
Brown sugar - 1 cup, firmly packed
Salt - 1 teaspoon
Orange rind - 1 teaspoon, grated
Egg - 1
Sifted flour - 2 1/4 cups
Baking powder - 1 teaspoon
Soda - 1/2 teaspoon
Milk - 3 tablespoons
Directions
GETTING READY
1) Grease a baking sheet.
MAKING
2) In a pot, mash the apricots to a smooth pulp.
3) Add in 1/2 cup sugar, apricot juice, salt, and orange juice.
4) Place over gentle heat, and while stirring cook for about 15 minutes. Cool.
5) In a mixing bowl, combine shortening and brown sugar and beat well till light and fluffy.
6) Add in the salt, orange rind and egg and beat well.
7) Combine and sift the flour, baking powder, and soda.
8) Add half of the flour to the creamed mix and blend well.
9) Add in the milk, then add the remaining flour and blend well.
10) Refrigerate for about 1 hour.
11) Pinching off small portions of dough, roll out to 1/8 inch thick on a lightly-floured board.
12) Using a cookie cutter, cut out 2 1/2-inch.
13) Add one rounded teaspoon of the apricot mix over each half of the cookies.
14) Using a thimble, cut out the center of the remaining rounds and place over the apricot filling.
15) Using the tines of a fork, press down the edges of the cookies and place on the baking sheet.
16) Place in the oven at 375°F and bake for 8 to 10 minutes.
