Ingredients
Apricot halves - 1-lb. 4-oz. can
Orange gelatin - 1 3-oz. package
Small curd cottage cheese - 1/3 c.
Evaporated skimmed milk - 1 c.
Directions
MAKING
1) Drain the apricots, keeping aside the syrup.
2) In a saucepan, add the reserved syrup and boil.
3) Add in the gelatin and stir till dissolved.
4) Stir in 1/2 cup water and stir. Keep aside to cool.
5) Fill the apricot halves with cottage cheese and then place together.
6) Place in the bottom of 5 1/2-cup ring mold.
7) Stir the milk into the gelatin mix and pour over the apricots.
8) Refrigerate till firm.
9) Unmold.
SERVING
10) Garnish with additional cottage cheese, mint sprigs, and whole apricots.
