Ingredients
| Orange juice | 3/4 Cup (16 tbs) | |
| Dried apricots | 1/2 Cup (16 tbs), snipped | |
| Sugar | 1/4 Cup (16 tbs) | |
| Ground cloves | 1/4 Teaspoon | |
| 6 pork chops, cut 3/4 inch thick | ||
Directions
Advance preparation:
In small saucepan combine juice, apricots, sugar, cloves, and 1/4 cup water.
Bring to boiling; cover and simmer till apricots are tender, 20 to 25 minutes.
Meanwhile, trim fat from pork chops.
Heat trimmings till 1 tablespoon fat accumulates; discard trimmings.
Brown the chops in hot fat.
Sprinkle generously with salt and pepper.
Place chops in 11x7 1/2x1 1/2 inch baking pan.
Spoon apricot mixture over.
Cover; refrigerate up to 24 hours.
Before serving:
Bake, covered, at 350° till tender, 45 to 50 minutes.
