Apricot Pie Recipe
The aprciot pie is a simple yet flavorful pie baked with tapioca instead of flour. The apricots are chopped and combind with cinnamon for extra flavor and sugar. The apricot pie is good when served with the nut sauce.
Ingredients
| Dried apricots | 2 Cup (16 tbs) | |
| Sugar | 1 Cup (16 tbs) | |
| Water | 1 1/2 Cup (16 tbs) | |
| Quick-cooking tapioca | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Cinnamon | 1 Teaspoon | |
| Pastry for 9-inch 2-crust pie | ||
Directions
Put apricots through food chopper, using coarse blade.
Add next 5 ingredients.
Bring to boil; reduce heat, cook and stir 2 or 3 minutes.
Line 9 inch pie plate with pastry; fill; dot with butter.
Adjust top crust.
Bake in hot oven (400°) about 30 minutes.
