Ingredients
Sugar
Melted butter - 1/4 c.
Graham cracker crumbs - 2 c.
Dried apricots - 1 1/2c., chopped
Salt - 1/4 tsp.
Cornstarch - 2 tbsp.
Directions
MAKING
1) In a bowl, add 1/4 cup sugar and butter and blend well.
2) Add over the crackers.
3) Press the cracker mix into an 8-inch pie pan and refrigerate.
4) In a saucepan, add apricots with 11/2 cups water and cook till softened.
5) Combine 1/3 cup sugar, salt, and cornstarch.
6) Add in 3 tablespoons of the liquid from the apricots to the cornstarch mix.
7) Add the cornstarch mix back into the apricots and allow to boil.
8) While stirring, cook for 3 minutes, till thick.
9) Refrigerate.
10) Add the filling into the pie shell.

11) Top with whipped cream or ice cream if desired.
