1 cup peeled, sliced fresh apricots

1 tablespoon firmly packed brown sugar
3 tablespoons water
2 tablespoons white vinegar

1 tablespoon chopped onion
1 teaspoon mustard seeds
2 teaspoons lime juice
1/4 teaspoon ground ginger
