Apricot Oatmeal Muffins Recipe
apricot oatmeal muffins are delighful and nutty little muffins baked with brown sugar and oats along with chopped apricots. A light and crunchy muffin, this recipe is a perfect snack anytime.
Ingredients
3/4 cup boiling water 175 mL
1 cup quick-cooking oats 250 mL
1/2 cup chopped dried apricots 125 mL
1/2 cup margarine or butter 125 mL
1 egg
1 cup milk 250 mL
21/2 cups all-purpose flour 625 mL
1/2 cup firmly packed brownsugar 125 mL
1 tbsp baking powder 15 mL
1/2 tsp salt 2mL
Directions
In a medium bowl, pour boiling water over oats, apricots and margarine.
Stir until margarine melts.
Set aside to cool.
Add egg and milk.
In a large bowl, combine flour, brown sugar, baking powder and salt.
Add oat mixture, stirring just until blended and moistened.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for about 20 minutes.
