Apricot-Oatmeal Bars Recipe

Ingredients
1 1/4 cups all-purpose flour
1 1/4 cups quick-cooking oats, uncooked
1/2 cup sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter or margarine, melted
2 teaspoons vanilla extract
1 (10-ounce) jar apricot preserves
1/2 cup flaked coconut
Directions
Combine flour, oats, sugar, soda, and salt in a large bowl, blend well.
Add butter and vanilla, mix until crumbly.
Reserve 1 cup mixture.
Press remaining crumb mixture into a greased 13- x 9- x 2-inch baking pan.
Spread apricot preserves on crust to within 1/4 inch from edge of pan.
Sprinkle with reserved crumb mixture and coconut.
Bake at 350° for 20 to 25 minutes or until lightly browned.
Cool and cut into bars.
