Make half of Basic Sweet Batter.
On paper towels, drain very well 1 can (1 lb, 13 oz) unpeeled apricot halves.
Meanwhile, in deep skillet or deep-fat fryer, slowly heat salad oil or shortening (at least 2 inches) to 375F on deep-frying thermometer.
Roll apricot halves in flour; shake off excess.
Then, with fingers, dip into batter, coating evenly.
Deep-fry a few at a time, turning once, 3 to 4 minutes, or until golden-brown on both sides.
Drain on paper towels.
Serve hot, sprinkled with confectioners' sugar, with Apricot Sauce, , and whipped cream.
