Apricot Dream Squares Recipe
Ingredients
1 cup crushed graham crackers
1 cup sifted all-purpose flour
1 cup shredded coconut
1 cup brown sugar, firmly packed
1/2 teaspoon salt
1/2 cup butter or margarine, melted
1 cup dried apricots
1 cup water
2 eggs
1 cup brown sugar, firmly packed
1 tablespoon lemon juice
1/3 cup sifted all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Directions
Combine first 5 ingredients.
Add butter or margarine, and mix well.
Reserve 1 cup mixture for topping.
Pack remainder in bottom of 9-inch square cake pan.
Bake 10 minutes at 350°F.
Cover apricots with water.
Simmer until tender, approximately 15 minutes.
Drain, chop and set aside.
Beat eggs until light, and add brown sugar and lemon juice.
Sift remaining ingredients together, and stir into eggs; add apricots.
Spread over bottom layer.
Sprinkle with topping.
Bake 30-35 minutes at 350°F.
