Ingredients

 2 cups dried apricots, cooked and chopped
 Honey 4 Tablespoon
 Vinegar1 1/2 Tablespoon
 1 teaspoon minced ginger root or 1/2 teaspoon ginger powder
 Coriander1/2 Teaspoon
 Pepper1
 1/2 cup raw cashews
 Raisins1/2 Cup (16 tbs)

Directions

Add all but the cashews and raisins to the apricots.
The amount of spices, vinegar, and honey can be increased or decreased according to taste.
Add cashews and raisins and mix well.
Serve with chicken curry or any cold meats.
