Apricot-Cake Parfaits Recipe
Ingredients
1 package (about 4 ounces) vanilla pudding and pie filling mix
1 jar (8 ounces) junior apricots
1 cup milk
4 ladyfingers
4 teaspoons apricot preserves
Whipped cream from a pressurized can
Directions
Combine pudding mix, junior apricots and milk in a medium-size saucepan; cook, following label directions for pudding.
Cool completely.
Separate ladyfingers; spread half of each with 1 teaspoon of the apricot preserves; put back together.
Stand each in the center of a parfait glass; spoon in cooled pudding.
Chill.
Just before serving, garnish with whipped cream.
