Apricot Bran Yogurt Muffins Recipe
apricot bran muffins are baked with natural bran and dried apricots. Baked with yogurt, this muffin comes out moist and delicious. The cinnamon and vanilla flavorng add an extra kick to this muffin recipe.
Ingredients
| All purpose flour | 1 1/4 Cup (16 tbs) | |
| 1 1/4 cups natural bran 300 mL | ||
| Packed brown sugar | 3/4 Cup (16 tbs) | |
| Baking powder | 1 Tablespoon | |
| 1 tsp baking soda 5mL | ||
| 1/4 tsp cinnamon lmL | ||
| Salt | 1/4 Teaspoon | |
| Dried apricots | 1 Cup (16 tbs), chopped | |
| 1 cup low-fat yogurt 250 mL | ||
| Vegetable oil | 1/4 Cup (16 tbs) | |
| Egg | 1 | |
| 11/2 tsp vanilla 7mL | ||
Directions
In a large bowl, combine flour, bran, sugar, baking powder, baking soda, cinnamon and salt.
Set aside 2 tbsp (25 mL) of the apricots and add remaining apricots to flour mixture.
In another bowl, whisk together yogurt, oil, egg and vanilla.
Add to flour mixture, stirring just until blended.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Sprinkle with reserved apricots.
Bake in preheated oven for 20 to 25 minutes.
