Apricot And Coconut Bars Recipe

Ingredients
FILLING:
1 cup dried apricots, chopped
1 cup water
1/4 cup brown sugar, firmly packed
1 teaspoon lemon juice
1/2 cup flaked coconut
CRUMB BASE:
1 cup quick cooking rolled oats
1/2 cup all purpose flour
1/2 cup brown sugar, firmly packed
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter or margarine
Directions
Combine apricots, water, sugar and lemon juice in a 1 1/2 qt.glass casserole dish.
Cover and microwave 6 to 8 minutes.
Stir once during cooking.
Mash apricots with the back of a spoon until mixture thickens.
Stir in coconut.
Combine dry ingredients in a small bowl.
Cut in butter until mixture is crumbly.
Firmly pat half of crumb mixture in bottom of an 8 inch square glass cake dish.
Spread with filling.
Sprinkle remaining crumb mixture over top of filling.
Microwave 8 to 9 minutes, giving dish a 1/2 turn every 2 minutes during cooking.
Chill until firm.
Cut into bars.
