Apricot Bars Recipe
This Apricot Bars recipe is easily right at the top of my most loved recipe list. In my view, to call yourself a chef, you need to have a personal recipe of Apricot Bars, just like I do.

2/3 cup dried apricots
1/2 cup (1 stick) butter or margarine
1/4 cup sugar
1 cup flour
1/3 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup brown sugar
2 eggs, well beaten
1/2 teaspoon vanilla
1/2 cup chopped nuts Powdered sugar
Directions
Rinse apricots; cover with water, and boil 10 minutes. Drain, cool, and chop. Mix butter, sugar, and 1 cup flour until crumbly. Pack into ungreased pan. Bake about 25 minutes, or until lightly browned. Sift together 1/3 cup flour, baking powder, and salt. Gradually beat brown sugar into eggs. Add flour mixture, mix well. Mix in vanilla, nuts, and apricots. Spread over baked layer. Bake 30 minutes, or until done. Cool in pan, then cut into bars and dust with powdered sugar.
