Apricot and Apple Whip Recipe
Ingredients
225 g (8 oz) dried apricot halves
600 ml (1 pint) water
225 g (8 oz) sliced dessert apples
2 egg whites
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Directions
1. Place the apricots in a saucepan and add 450 ml (3/4 pint) of the water. Bring to the boil, cover and simmer until all the water is absorbed and the fruit is quite mushy. Cook the apple slices in the remaining water just until soft.
2. Pass each fruit through a sieve into separate bowls. Beat the egg whites until stiff and fold half into each fruit puree, adding the cinnamon to the apple and the nutmeg to the apricots.
3. To serve, spoon a layer of apricot puree into individual glasses, then spoon in a layer of apple.
