Apricot Wine Soup Recipe
This is a kick ass recipe for Apricot Wine Soup which will knockout anyone who eats it. Excuse my French please. It is always prepared with a focus on Fruits. Best enjoyed as an Appetizer this recipe was taught to me by a dear friend who also happens to be a great chef. Ingredients
2/3 cup chopped dried apricots
2/3 cup peeled and diced tart apple
1 cup water
1 can (12 ounce) apricot-orange nectar
1-1/4 cups apple juice
1/2 cup sour cream
3/4 cup chilled dry white wine, or to taste
Mint sprigs
Directions
Cook apricots and apple in water, covered, until apricots are soft, adding more water if needed.
Puree with nectar, apple juice and sour cream.
Chill, add wine and serve with mint sprigs.
