Apricot And Herb Stuffing Recipe
Ingredients
| Dried apricots - 2 ozs | ||
| Water | 1/4 Pint | |
| Butter or dripping - 1 oz | ||
| Small onion | 1 | |
| Cubes of dry bread - 1/2 pt | ||
| Parsley | 1 Teaspoon, chopped | |
| Tarragon | 1/2 Teaspoon, chopped | |
| Thyme | 1/8 Teaspoon, chopped | |
| Lemon rind - 1/8 teaspoon, grated | ||
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Apricot juice - 2-4 teaspoon | ||
Directions
GETTING READY
1 In a bowl, soak the apricots in water overnight.
MAKING
2 In a pan, put the soaked apricots and simmer till tender.
3 Thoroughly drain an reserve the juice.
4 Cut up the fruit.
5 In a skillet, add butter and saute onion until tender but not brown.
6 Add in the bread cubes and other ingredients.
7 Pour in the reserved juice from the apricots, just enough to make the mixture stick together.
SERVING
8 Use for poultry or pork or ham.
