 Dried apricots - 2 ozs
 Water1/4 Pint
 Butter or dripping - 1 oz
 Small onion1
 Cubes of dry bread - 1/2 pt
 Parsley1 Teaspoon, chopped
 Tarragon1/2 Teaspoon, chopped
 Thyme1/8 Teaspoon, chopped
 Lemon rind - 1/8 teaspoon, grated
 Salt1/2 Teaspoon
 Pepper1/8 Teaspoon
 Apricot juice - 2-4 teaspoon

Directions

GETTING READY
1 In a bowl, soak the apricots in water overnight.

MAKING
2 In a pan, put the soaked apricots and simmer till tender.
3 Thoroughly drain an reserve the juice.
4 Cut up the fruit.
5 In a skillet, add butter and saute onion until tender but not brown.
6 Add in the bread cubes and other ingredients.
7 Pour in the reserved juice from the apricots, just enough to make the mixture stick together.

SERVING
8 Use for poultry or pork or ham.
