Apricot Sticks Recipe
Ingredients
| Dried apricot | 1 | |
| Shredded coconut | 1/2 Cup (16 tbs), flaked | |
| Candied pineapple | 1/4 Cup (16 tbs), finely chopped | |

Directions
MAKING
1) Rinse the apricots.
2) In a pot of boiling water, add in the apricots. Let it stand for 5 minutes till the fruits become soft.
3) Drain the apricots. Drain them further by placing over paper towels.
4) In a bowl, mix the coconut and candied pineapple.
5) With the skin surface down flatten each of the apricot half. Take a little of the coconut-pineapple mixture and spread evenly over the surface. Roll it up like a jelly roll.
6) Arrange the jelly roll on a tray and allow. Roll it over a plate of sugar. Let dry at room temperature.
SERVING
7) Serve the apricot candies as appetizer.
