Apricot Slices Recipe
Ingredients
| Graham crackers | 16 | |
| Walnuts | 1/2 Cup (16 tbs) | |
| Dried apricots | 1 Cup (16 tbs) | |
| Butter/Margarine | 2 Tablespoon | |
| Eggs | 2 | |
| Granulated Sugar | 1/2 Cup (16 tbs) | |
| Brown sugar | 1/2 Cup (16 tbs) | |
| Vanilla | 1 Teaspoon | |
| Coconut | 1 Cup (16 tbs) |
Directions
Break 5 or 6 crackers into blender container; blend to fine crumbs.
Set aside.
Repeat.
Put nuts in blender; blend till coarsely chopped.
Add to crumbs.
Put apricots in blender; blend till finely chopped.
Melt butter in large skillet.
Add apricots and stir.
Put eggs and sugars in blender; blend smooth.
Add to apricots.
Cook over low heat; stir till sugars melt and mixture is thick and bubbly, 10 to 15 minutes.
Remove from heat; stir in vanilla, crumbs, nuts, and coconut.
Shape two 7-inch rolls.
Wrap; chill and slice.
