Ingredients

 
1/3 cup sugar
 
1 teaspoon unfavored gelatin
 
1 can (5 1/2 ounces) apricot nectar
 
1/2 cup chopped dried apricots
 
3 tablespoons honey
 
2 teaspoons lemon juice
 
2 cups buttermilk

Directions

1 ln a medium-size saucepan, combine the sugar and gelatin.
Stir in the nectar, apricots, and honey.
Bring to a simmer over moderately low heat and cook for 1 minute.
Remove from the heat and let stand for 1 5 minutes or until the apricots are softened.
2 Transfer the mixture to a food processor or blender.
Add the lemon juice and whirl for 30 seconds or until smooth.Add the buttermilkand whirl 1 5 seconds more or until blended.
Transfer to an ice cream maker and freeze accordingto the manufacturer's instructions or transfer to an 8 x 8 x2 pan cover with plastic food wrap and freeze for 2 hours or until the center is almost frozen.
Remove the sherbet from the freezer and beat until smooth (see Tip, right).
Return to the freezer for 45 minutes more, then beat again until smooth.
Freeze 2 to 3 hours longer oruntil firm
