Directions

MAKING
1. In a bowl, place the wild salmon, add garlic paste, apricot sauce, brown sugar and coat it well.
2. In a skillet on medium high heat, spray the sesame oil and gently place the apricot coated salmon.
3. Season the top of the salmon with salt and pepper and fry it pressing gently on both sides for 4 minutes or until golden brown.
4. Using a meat thermometer, check if the salmon is completely cooked.

SERVING
5. Garnish the apricot salmon with chopped coriander and slicing into halves, serve it with a bowl of white rice.
6. Use the sliced apricot salmon as a topping for any pasta dish.
