Apricot Puree with orange Sauce Recipe
Ingredients
| Dried apricots | 250 Gram | |
| Water | 2 1/4 Cup (16 tbs) | |
| Orange juice | 1 Tablespoon | |
| Grated rind of 1 orange | ||
| 3 tablets, sugar-free sweetener, powdered | ||
| Cottage cheese | 2 Tablespoon, crumbled (Sauce) | |
| 4 tbsp curd made from fat-free milk, whisked | ||
| Orange juice | 5 Teaspoon (Sauce) | |
| 2 tablets sugar-free sweetener, powdered | ||
Directions
Wash apricots and soak in water for 5-6 hours till fruit is soft and swollen.
Remove seeds and discard.
Reserve water.
Place apricots with reserved water in a medium-sized pan over moderate heat and cook till tender.
Remove from heat, pour in orange juice, rind and sweetener and blend till smooth.
Spoon into 6 wine glasses or individual dessert bowls.
Blend paneer, curd and juice for sauce till smooth.
Add sweetener and blend till well mixed.
Spoon over apricot puree and chill.
Serve chilled.
