Ingredients

 Dried apricots250 Gram
 Water2 1/4 Cup (16 tbs)
 Orange juice1 Tablespoon
 Grated rind of 1 orange
 3 tablets, sugar-free sweetener, powdered
 Cottage cheese2 Tablespoon, crumbled (Sauce)
 4 tbsp curd made from fat-free milk, whisked
 Orange juice5 Teaspoon (Sauce)
 2 tablets sugar-free sweetener, powdered

Directions

Wash apricots and soak in water for 5-6 hours till fruit is soft and swollen.
Remove seeds and discard.
Reserve water.
Place apricots with reserved water in a medium-sized pan over moderate heat and cook till tender.
Remove from heat, pour in orange juice, rind and sweetener and blend till smooth.
Spoon into 6 wine glasses or individual dessert bowls.
Blend paneer, curd and juice for sauce till smooth.
Add sweetener and blend till well mixed.
Spoon over apricot puree and chill.
Serve chilled.
