Apricot Pudding Recipe

It is the one dish that anybody on Diabetic diet can have. It is always prepared with Fruits as the key ingredient. Treat your family to this delicious Apricot Pudding. Ingredients
1/3 cup unsweetened apricot puree (baby food)
1 tsp baking soda
1 egg, beaten
1/2 cup milk
1 tsp lemon juice
1/2 tsp almond extract
1 tsp margarine, melted
1 cup flour, sifted
2 tsp granulated sugar replacement
Dash salt
Directions
Combine apricot puree and baking soda in small-mixing bowl; allow to rest 5 minutes.
Combine remaining ingredients in large mixing bowl, add puree, and beat well to blend.
Pour into well greased 8 in. (20 cm) square baking dish, and bake at 350°F (175°C) for 1 hour.
Allow to cool slightly before serving.
