Apricot & Pecan Torte Recipe
Ingredients
| Vanilla wafers | 1/2 pound, crushed | |
| Butter | 1 Cup (16 tbs) | |
| Confectioner’s sugar | 1 1/3 Cup (16 tbs) | |
| Eggs | 3 | |
| Apricots | 1 , peeled | |
| Pecans | 1 Cup (16 tbs), chopped | |
| Whipping cream | 1 Pint, Whipped |
Directions
MAKING
1) Into a 8 x 12 inch pan, line with was paper
2) Crush lightly the vanilla wafers into crumbs
3) Into bowl, add in the butter, sugar and eggs and beat until smooth using an electric mixer
4) Reserving 3 tablespoons, layer the base of the pan
5) Layer in the butter mixture, apricots, nuts and the whipped cream
6) Lastly top with the reserved crumbs
7) Place in the refrigerator for about 12 hours
SERVING
8) Serve chilled
