Apricot Oatmeal Bars Recipe
Ingredients
| All purpose flour | 1 1/4 Cup (16 tbs) (Crumb Mixture:) | |
| Quick cooking oats | 1 1/4 Cup (16 tbs) (Crumb Mixture:) | |
| Sugar | 1/2 Cup (16 tbs) (Crumb Mixture:) | |
| 3/4 c. Land O Lakes butter, melted | ||
| Baking soda | 1/2 Teaspoon (Crumb Mixture:) | |
| Salt | 1/4 Teaspoon (Crumb Mixture:) | |
| Vanilla | 2 Teaspoon (Crumb Mixture:) | |
| 1 (10 oz.) jar apricot preserves | ||
| Flaked coconut | 1/2 Cup (16 tbs) (Filling:) | |
Directions
Heat oven to 350°.
For crumb mixture in large mixer bowl, combine all crumb mixture ingredients.
Beat at low speed, scraping bowl often, until mixture is crumbly, 1 to 2 minutes.
Reserve 1 cup crumb mixture; press remaining crumb mixture into greased 13 x 9-inch baking pan.
For Filling: Spread apricot preserves on top of crumb mixture.
Sprinkle with remaining crumb mixture and coconut.
Bake for 22 to 27 minutes or until edges are lightly browned.
Cool and cut into bars.
