Apricot Loaf Recipe

Ingredients
1 cup apricots
2 1/2 cup flour
2 tsp baking powder
1 tsp baking soda
Dash salt (optional)
2 tsp grated orange rind
1/4 cup sugar
9 pkts. concentrated acesulfame-K
2 egg whites
2/3 cup skim buttermilk
2/3 cup orange juice
1 tsp vanilla extract
1/4 cup unsweetened applesauce
Glaze ingredients
1 tsp cornstarch
1/4 cup water
2 tsp measures-like-sugar aspartame
1/2 tsp orange extract
Directions
Snip the apricots into small pieces with a pair of scissors.
Set aside.
Combine the flour, baking powder, baking soda, salt, orange rind, sugar, and acesulfame-K in a bowl.
Add the apricot pieces and stir to combine.
In a separate container, beat the egg whites and combine with the buttermilk, orange juice, vanilla extract, and applesauce.
Add the wet ingredients to the dry ones, stirring until just combined.
Do not overmix.
Pour into a 9 x 5-inch (23 x 13 cm) loaf pan that has been sprayed with non-stick vegetable cooking spray.
Bake in a preheated 350°F (180°C) oven for 50 minutes.
Prepare the glaze as follows.
Combine the cornstarch and water in a small saucepan.
Heat over medium heat; stir with a wire whisk until thickened.
Turn off the heat, stir in the aspartame and extract.
As soon as the bread is out of the oven, turn it onto a plate.
Use a toothpick to poke holes in the top.
Mix the glaze and pour it over the top.
