Ingredients
1/4 cup granulated sugar replacement
1 cup water
1 tsp cornstarch
1 cup unsweetened apricot puree
2 tsp lemon juice
Directions
Combine sugar replacement, water and cornstarch in saucepan; bring to a boil.
Reduce heat and simmer 5 minutes.
Add apricot puree and lemon juice.
Pour into freezer tray and cover with waxed paper.
Freeze until firm.
For fluffy ice: Freeze until mushy.
Scrape into mixing bowl or blender and beat just until loosened.
Return to freezer tray.
