Apricot Grapefruit Sorbet Recipe
Ingredients
1 cup water
2/3 cup honey
1 1/4 cups grapefruit juice (freshly squeezed)
1 cup apricot puree
1 tablespoon lemon juice
1 egg white, beaten stiff
Directions
Combine water and honey in a small saucepan and boil for 5 minutes.
Cool thoroughly.
Mix grapefruit juice, apricot puree, and lemon juice.
Stir into the cold syrup.
Pour into the container of an ice cream freezer and freeze to the consistency of soft mush.
Remove lid from the container and stir in egg white.
Recover and continue processing until stiff enough to serve.
If not serving immediately, store in freezer until about 15 minutes before serving.
