Apricot Cake Recipe

Ingredients
4 eggs
1 1/4 cups granulated sugar
1 1/4 cups all-purpose flour
2 tablespoons potato flour
2 teaspoons baking powder
5 tablespoons boiling water
Butter (to grease baking dish)
Bread crumbs
Filling:
3/4 cup apricot jam
3/4 cup whipped cream
Garnish:
1 can preserved apricots
Directions
1. Beat eggs and sugar until foamy.
2. Mix flour, potato flour, and baking powder. Add to egg mixture.
3. Add boiling water to batter.
4. Butter baking dish and sprinkle with bread crumbs. Put in batter.
5. Bake in 350°F oven for 30-35 minutes.
6. Cut cake in two layers when cooled. Put whipped cream and jam between layers. Garnish with apricots.
