Apricot Brie Spread Recipe
Ingredients
| Water | 1/2 Cup (16 tbs) | |
| Dried apricots | 1/4 Cup (16 tbs), chopped | |
| Brandy | 2 Teaspoon | |
| 1 (15-ounce) round Brie cheese | ||
| Pecans | 2 Tablespoon, chopped | |
Directions
Combine first 3 ingredients in a small saucepan; bring to a boil over medium heat.
Cook, stirring constantly, 5 minutes or until apricots are soft.
Remove rind from top of cheese, cutting to within 1/4 inch of outside edge.
Place cheese on a baking sheet; top evenly with warm apricot mixture and chopped pecans.
Broil 8 inches from heat (with electric oven door partially opened) 2 to 4 minutes or until cheese softens slightly.
Carefully transfer cheese to a serving platter, and garnish, if desired.
Serve with gingersnaps or lightly sweetened crackers.
