Apricot Bars Recipe

16 oz. apricot halves in juice

1 tsp white grape juice concentrate
 
2 tsp granulated sugar replacement
 
1 tsp cornstarch
 
1 tsp almond flavoring
 
1 drop red food coloring
 
1 drop yellow food coloring
 
Base
 
1/2 cup quick-cooking oatmeal
 
1/2 cup all-purpose flour
 
1/4 cup margarine

Directions

Filling: Drain 1/2 c. (125 mL) of the juice from the apricots into a small saucepan.
Thoroughly drain remaining apricots.
Reserve apricot halves.
Add grape juice concentrate, sugar replacement, and cornstarch to saucepan.
Stir to thoroughly dissolve cornstarch.
Place over medium heat, and cook until mixture comes to a full boil, stirring constantly.
Boil for 5 minutes, stirring constantly.
Remove from heat.
Add almond flavoring and food coloring.
Set aside to cool.
Base: Combine oatmeal, flour, and margarine in a bowl.
Cut and work margarine into dry mixture until mixture is in small crumbs.
Lightly grease an 8 x 8 in. (20 x 20 cm) baking pan with vegetable oil spray.
Press mixture into the bottom of the pan.
Bake at 350°F (175°C) for 10 minutes.
Remove from oven.
Place apricot halves over entire surface of base.
Pour apricot filling over surface.
Return to oven, and bake for 35 minutes or until filling is set.
Cool on rack.
Cut into 36 bars.
