 25 celery sticks, each 1 1/2 inches in length
 3 tablespoons coarsely chopped dried apricots
 Part skim ricotta cheese1/2 Cup (16 tbs)
 Sugar1 1/2 Teaspoon
 Orange peel1/4 Teaspoon, grated
 Salt1/8 Teaspoon

Directions

Cut thin slice from bottom of each celery stick so it can lie flat; set aside.
Place apricots in food processor or blender; process until finely chopped.
Reserve 1 tablespoon apricots for garnish.
Add ricotta cheese, sugar, orange peel and salt to food processor; process until cheese is smooth.
Fill celery sticks with cheese mixture.
Cover and refrigerate up to 3 hours
Sprinkle with reserved chopped apricots
