Apricot And Ricotta Stuffed Celery Recipe
Ingredients
| 25 celery sticks, each 1 1/2 inches in length | ||
| 3 tablespoons coarsely chopped dried apricots | ||
| Part skim ricotta cheese | 1/2 Cup (16 tbs) | |
| Sugar | 1 1/2 Teaspoon | |
| Orange peel | 1/4 Teaspoon, grated | |
| Salt | 1/8 Teaspoon | |
Directions
Cut thin slice from bottom of each celery stick so it can lie flat; set aside.
Place apricots in food processor or blender; process until finely chopped.
Reserve 1 tablespoon apricots for garnish.
Add ricotta cheese, sugar, orange peel and salt to food processor; process until cheese is smooth.
Fill celery sticks with cheese mixture.
Cover and refrigerate up to 3 hours
Sprinkle with reserved chopped apricots
