Apricot And Date Chutney Recipe
Ingredients
| Dried apricots | 2 Pound | |
| Pitted dates | 2 1/2 Cup (16 tbs) | |
| Brown sugar | 3 Cup (16 tbs) | |
| Raisins | 2 1/2 Cup (16 tbs) | |
| White wine vinegar | 2 Cup (16 tbs) | |
| Water | 2 Cup (16 tbs) | |
| Mustard seed | 1 Tablespoon | |
| Salt | 1 Tablespoon | |
| Ginger | 2 Teaspoon | |
| Coriander | 1 Teaspoon |
Directions
Soak apricots in water to cover for 30 minutes.
Drain and place in large sauce pot.
Chop the dates and add to apricots.
Add remaining ingredients and simmer over low heat, stirring frequently until thick; about 1 hour.
Pack hot into hot jars, leaving 1/4 inch head space.
Adjust caps.
Process 10 minutes in boiling water bath.
