 Dried apricots2 Pound
 Pitted dates2 1/2 Cup (16 tbs)
 Brown sugar3 Cup (16 tbs)
 Raisins2 1/2 Cup (16 tbs)
 White wine vinegar2 Cup (16 tbs)
 Water2 Cup (16 tbs)
 Mustard seed1 Tablespoon
 Salt1 Tablespoon
 Ginger2 Teaspoon
 Coriander1 Teaspoon

Directions

Soak apricots in water to cover for 30 minutes.
Drain and place in large sauce pot.
Chop the dates and add to apricots.
Add remaining ingredients and simmer over low heat, stirring frequently until thick; about 1 hour.
Pack hot into hot jars, leaving 1/4 inch head space.
Adjust caps.
Process 10 minutes in boiling water bath.
