Ingredients

 Dried apricots250 Gram
 1 tablespoon gelatine, dissolved in 4 tablespoons hot water
 Evaporated milk1 Cup (16 tbs)
 Caster sugar3 Tablespoon
 Almond essence1 Teaspoon
 Toasted almonds1 Tablespoon, finely chopped

Directions

1.Place apricots in a bowl, pour in sufficient water to cover and leave to soak overnight.
2.Drain apricots and place in a food processor or blenderwith gelatine mixture, skim milk, sugar and almond essence.
Process until smooth.
Pour into individual glasses.
Refrigerate until firm.
To serve sprinkle with almonds.
