Ingredients
2 1/2 cups unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup brown sugar, firmly packed
1 tablespoon ground cinnamon
1 cup applesauce
2 egg whites
1 cup skim milk
Directions
1. Combine the white flour, baking powder, salt, sugar, and cinnamon.
2. Stir in the applesauce, egg whites, and milk.
3. Pour into a nonstick loaf pan, or a pan lined with a baking pan liner or lightly sprayed with vegetable cooking spray. Let stand for 1 hour.
4. Preheat oven to 325 degrees.
5. Bake bread for 50 minutes or until a wooden pick inserted in center of the bread comes out dry.
6. Cool in pan for 10 minutes, then transfer to a wire rack to cool. Cut into 10 slices.
