Applesauce Oat Bran Muffins Recipe

Ingredients

 
1 cup oat bran 250 mL
 
1 cup all-purpose flour 250 mL
 
1/4 cup granulated sugar 50 mL
 
1 tbsp baking powder 15 mL
 
1/2 tsp salt 2mL
 
1/4 cup raisins 50 mL
 
2 eggs
 
1 cup unsweetened applesauce 250 mL
 
3 tbsp milk 45 mL
 
3 tbsp vegetable oil 45 mL
 
TOPPING:
 
1 tbsp granulated sugar 15 mL
 
1/2 tsp cinnamon 2mL
 
1/4 cup chopped walnuts 50 mL

Directions

In a large bowl, combine oat bran, flour, sugar, baking powder, salt and raisins.
In another bowl, beat eggs lightly with a fork.
Stir in applesauce, milk and oil.
Pour into dry ingredients.
Stir just until moist and blended.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Sprinkle with sugar, cinnamon and walnuts.
Bake in preheated oven for 20 minutes.
HINT: Here's a great way to crush nuts and avoid messy clean-ups: Place nuts in a plastic bag or between sheets of wax paper and crush with a rolling pin.
