Ingredients

 
1 1/2 cups brown sugar
 
1/2 cup vegetable shortening
 
1 egg
 
1 cup applesauce
 
1 teaspoon baking soda
 
1 teaspoon salt
 
1 teaspoon cinnamon
 
1/2 teaspoon ground cloves
 
2 cups sifted cake flour

Directions

Cream brown sugar and vegetable shortening.
Add egg and mix well.
Combine applesauce and soda; stir into creamed mixture.
Stir in salt and spices; add flour and mix thoroughly.
Fill greased muffin pans half full.
Bake at 400° for 15 minutes.
Cool.
Frost with Tangy Lemon Frosting.
If desired, add 1/2 cup raisins or finely chopped nuts to batter before baking.
