Ingredients

 Graham crackers24 , crushed
 Butter1/4 pound, melted
 Apples3 Pound
 Eggs6 , separated
 Sweetened condensed milk1 Cup (16 tbs)
 Lemon juice3 Tablespoon
 1 tablespoon grated lemon rind

Directions

Mix crumbs and butter.
Line greased torte pan with half of mixture.
Pare apples, slice and cook with a little water to a thick sauce.
Mash.
Add beaten egg yolks, milk, lemon juice and rind and mix well.
Fold in stiffly beaten egg whites.
Pour into crumb-lined pan, cover with remaining crumbs and bake in moderate oven (350°F.) until firm and lightly browned, 45 to 60 minutes.
Cool.
Serve with whipped cream.
Serves 10 to 12.
Use 3 cups prune and apricot pulp instead of applesauce.
