Applesauce Spice Cookies Recipe




 Diet margarine1⁄2 Cup (8 tbs)
 Brown sugar1⁄2 Cup (8 tbs), firmly packed
 Unsweetened applesauce1⁄4 Cup (4 tbs)
 Vanilla extract1⁄4 Teaspoon
 Sifted all purpose flour2 1⁄4 Cup (36 tbs)
 Baking soda1⁄4 Teaspoon
 Cinnamon1⁄4 Teaspoon
 Nutmeg1⁄4 Teaspoon
 Cloves1⁄8 Teaspoon
 Golden raisins1⁄4 Cup (4 tbs), chopped

1. Preheat oven to 375° F.
2. Using electric mixer at high speed, beat together diet margarine and brown sugar in large bowl until creamy; beat in applesauce and vanilla extract.
3. In separate bowl, sift flour again along with baking soda, cinnamon, nutmeg and cloves. With mixer at low speed, slowly stir flour mixture into applesauce mixture. Stir in chopped raisins, mixing well.
4. Drop dough by rounded teaspoonfuls 1 1/2 inches apart onto cookie sheet with nonstick finish. Bake for 10 to 12 minutes. Remove cookies to wire rack to cool.
