Applesauce Raisin Cookies Recipe

| 1 cup unsweetened | ||
| Applesauce | ||
| Vanilla | 1 Teaspoon | |
| Vegetable oil | 3/4 Cup (16 tbs) | |
| 2 tsp liquid sugar substitute | ||
| Eggs | 2 | |
| Flour | 2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Baking soda | 1 Teaspoon | |
| Nutmeg | 1/2 Teaspoon | |
| Cinnamon | 1/2 Teaspoon | |
| 4 tsp carob powder or cocoa | ||
| Nuts | 1/2 Cup (16 tbs) | |
Directions
Simmer raisins in water until water is absorbed.
Add applesauce, vanilla, oil, sweetener and eggs to cooled raisins.
Stir in dry ingredients and nuts.
Mix well.
Drop by spoonfuls on greased baking sheets and bake at 350 degrees, 15-20 minutes, just until done.
Do not overbake.
