 Whole wheat flour1 Cup (16 tbs)
 1 cup unbleached white flour

 Ground nutmeg1/4 Teaspoon
 Prunes1 Cup (16 tbs), pitted
 Walnuts1/2 Cup (16 tbs), coarsely chopped
 Vegetable oil1/2 Cup (16 tbs)
 1/2 cup honey, slightly warmed
 Molasses3 Tablespoon
 Egg1
 1/2 teaspoon grated lemon rind
 1 cup thick unsweetened applesauce

Directions

Preheat oven to 325 °F.
Butter a 12 X 7 (or 8) X 2-inch baking pan.
Into a medium-size bowl, sift together whole wheat flour, unbleached white flour, baking soda, and spices.
Cut prunes into pieces.
Place prunes and walnuts, if desired, into a small bowl, and mix with 1 tablespoon flour mixture.
In a large bowl, beat oil, honey, and molasses together until well blended.
Beat in egg and lemon rind.
Stir in applesauce.
Mix in dry ingredients until just blended.
Fold in prune mixture.
Spoon batter into prepared pan, and bake for 45 minutes, or until a cake tester inserted into the center comes out clean and dry.
