Apples Stuffed with Prunes Recipe
Ingredients
| 4 large Mcintosh apples | ||
| Lemon juice | 1 Teaspoon | |
| 1/4 cup finely chopped prunes | ||
| Walnuts | 1 Tablespoon | |
| Honey | 1 Teaspoon | |
| Ground cinnamon | 1/4 Teaspoon | |
| 1/4 cup orange or apple juice | ||
Directions
Core the apples and remove about 1" of the peel from around the tops.
Rub the exposed surfaces with the lemon juice.
Prick the skins in several places with a fork to keep the apples from bursting.
In a small bowl, combine the prunes, walnuts, honey and cinnamon.
Divide the mixture among the apples, stuffing it into the cored areas.
Arrange the apples in a 3-quart casserole dish.
Add the orange or apple juice to the casserole.
Cover with vented plastic wrap.
Microwave on high for 4 minutes.
Give the dish a half turn and microwave on high for 3 minutes, or until the apples are tender and easily pierced with a sharp knife.
