 6 dessert apples
 Cider16 Ounce

 Juice of 1/2 lemon
 Ggrated rind of 1 lemon
 Ground ginger1/4 Teaspoon

Directions

Make a syrup, by cooking for 10 minutes 8 oz. sugar with 16 oz. cider, a small stick of cinnamon, 6 cloves, 4 whole allspice, 1/4 teaspoon nutmeg and 1/4 teaspoon ground ginger.
Peel, core and quarter 6 apples.
Simmer half of them gently in the syrup for 10 minutes or until they are just tender.
Carefully remove to a serving dish.
Cook the remaining apples in the same way.
Place them on the serving dish.
Strain the remaining syrup.
Add 4 oz. of sugar, the juice of 1/2 lemon and the grated rind of 1 lemon, cook until it thickens, 5 to 10 minutes.
Pour over all the apples and chill in the refrigerator until serving time.
